The Summer Dessert Trends Making Their Way onto Canadian Menus
August 12, 2026

Global flavours, nostalgic favourites, texture-driven desserts and alcohol-free beverages are shaping consumer cravings this season
This summer, consumers are looking for more than just a sweet treat.
Dessert and beverage choices are increasingly being shaped by a desire for new experiences, from discovering unexpected flavour combinations to enjoying familiar favourites in fresh and creative ways. As tastes continue to evolve, cafés and restaurants are finding new opportunities to reimagine classic desserts while introducing concepts that reflect how people want to eat, drink and connect.
“At D-Spot, we’re constantly paying attention to emerging food and beverage trends and how consumer tastes are evolving,” says Kaan Sayiner, CEO and President of D-Spot Dessert Café. “What’s interesting is that many of the flavours and concepts generating buzz this summer have been part of our menu for years.”
According to industry forecasts and consumer data, some of the biggest dessert and beverage trends shaping 2026 include:
Global flavours continue to gain momentum: Dessert trend forecasts suggest consumers are increasingly embracing globally inspired flavours and desserts influenced by cultures and traditions from around the world. Rather than relying solely on familiar favourites, consumers are showing interest in desserts that introduce new flavour combinations and experiences.
Texture is becoming just as important as flavour: Crunch, crumble, crack and melt are becoming just as important as flavour. Industry experts predict consumers will continue seeking desserts that combine contrasting textures and create a more memorable eating experience.
Mocktails are having a major moment: As more Canadians moderate their alcohol consumption, non-alcoholic beverages are becoming a year-round lifestyle choice rather than a seasonal trend. Canada's no- and low-alcohol beverage category has grown to more than $220 million in annual sales and continues to gain momentum, while alcohol consumption recently fell to its lowest level in two decades.
Nostalgic flavours are getting a modern upgrade: Dessert experts suggest consumers continue to gravitate toward nostalgic flavours and comfort-food favourites, particularly when they're presented in new and unexpected ways. Familiar ingredients and classic dessert inspirations are being reimagined through premium ingredients, creative formats and elevated presentations.
D-Spot's menu reflects many of these trends through offerings such as its Pistachio Milk Cake, featuring soft tres leches-infused sponge cake layered with airy whipped cream and crushed pistachios, and the Tantalize Your Taste Buds sundae, which pairs Saffron Pistachio Custard ice cream with pistachios, almonds and Belgian white chocolate. Texture-driven creations such as the Cookie Butter Heaven croffle and Banoffee Brûlée deliver layers of crunch, creaminess and sweetness through warm Lotus cookie butter sauce, cookie crumble, caramelized banana and toffee. Guests looking for nostalgic flavours can enjoy Lotus-inspired favourites found throughout the menu, while fruit-forward beverages like the Passion Fruit Mojito, Mango Mojito and Strawberry Rose Palmer offer a refreshing alcohol-free option for the summer season.
“Consumers today want desserts that feel both familiar and exciting,” says Sayiner. “They’re looking for bold flavours, interesting textures and experiences they can share with friends and family.”
